This is an intensely concentrated, mature Premier Cru from one of Burgundy’s most celebrated climes and a pioneer of micro-négoce artisanal winemaking: the Dominique Laurent Gevrey-Chambertin 1er Cru "Lavaux Saint-Jacques" Vieilles Vignes 2005. Renowned for championing very old, low-yielding vines, minimal intervention, unfined and unfiltered bottlings, and élevage in custom heavy-toast "magic casks" (fûts magiques), Laurent's wines possess signature power, volume, and remarkable longevity. Hailing from the cool, limestone-rich Combe de Lavaux in the monumental, benchmark 2005 vintage, this bottle has entered an exquisite, fully integrated drinking window. The nose opens with an intoxicating, multi-layered perfume of ripe black cherries, wild blackberries, and damson plums, seamlessly interwoven with forest floor sous-bois, black truffles, cigar box cedar, leather, smoked game, and exotic crushed spices. On the palate, it is muscular, velvety, and expansive, framing its deep core of dark fruit with completely resolved, cashmere-textured tannins and a cooling streak of limestone acidity that carries into a remarkably resonant, savory, and mineral-laden finish.

Highlights

  • Vintage: 2005

  • Region/Appellation: Gevrey-Chambertin 1er Cru ("Lavaux Saint-Jacques"), Côte de Nuits, Burgundy, France

  • Producer: Dominique Laurent

  • Grape: 100% Pinot Noir (Vieilles Vignes)

  • Style: Fully Matured, Muscular, Velvety, Concentrated, and Legendary Premier Cru Red Burgundy

  • Perfect for (food pairing): Pan-roasted squab with black truffle jus, roasted Bresse pigeon, slow-roasted rack of lamb with a garlic and rosemary crust, prime beef tenderloin with morel reduction, or tender venison loin with juniper berries. Its savory game nuances, earthy forest floor depth, and melted tannins also make it a phenomenal match for duck confit, slow-braised beef cheeks, truffled wild mushroom risotto, or mature artisanal cheeses such as an aged Comté, Saint-Nectaire, or Époisses.
