This is the undisputed crown jewel of Chinese spirits and a global luxury icon: the Kweichow Moutai "Flying Fairy" (Feitian) 53% ABV (2012 Vintage). Revered as China's "National Liquor," Moutai is produced exclusively in the town of Maotai along the Chishui River in Guizhou Province through a legendary, highly complex solid-state fermentation and multi-cycle distillation process aged in terracotta jars. Now with over a decade of bottle age, it has softened into an exceptionally mellow, round, and harmonious profile. The nose unfolds with an inviting, savory bouquet of roasted sorghum, fermented bean paste, and roasted nuts, accented by hints of dried stone fruits, floral honey, baked herbs, and delicate cereal grains. On the palate, it is remarkably silky, mild, and non-aggressive, offering a smooth entry with gentle sweetness, balanced umami, and a clean, refreshing, and pleasantly lingering finish.
