The "Nana-Tsu-Mori" is the flagship vineyard of the estate, farmed organically with a deep respect for the local ecosystem. The 2021 vintage in Hokkaido is highly regarded for its balance and purity. Takahiko Soga uses 100% whole-bunch fermentation and ages the wine in older oak barrels to ensure the delicate aromatics of the Pinot Noir are not overwhelmed.
This wine is famously difficult to acquire, often sold via lottery or strictly allocated to top-tier restaurants. It is prized for its ethereal, "transparent" style that resembles the elegance of fine Burgundy but with a distinct Japanese signature of spice and earthiness.
