This is another compelling, zero-dosage natural cuvée from one of Champagne’s most exciting low-intervention trailblazers: the Champagne Chavost "Blanc d'Assemblage" Brut Nature. Masterfully crafted by cellar master Fabian Daviaux in the Côteaux Sud d'Épernay village of Chavot-Courcourt, Chavost is globally celebrated for its radical sans-soufre ethos—fermenting parcel-selected fruit exclusively with native yeasts, omitting all added sulfites, and bottling unfined, unfiltered, and with zero dosage. This "Blanc d'Assemblage" blends equal parts Chardonnay and Pinot Meunier to harmonize the chalky, razor-sharp tension of the former with the juicy, floral fleshiness of the latter. The nose opens with an inviting, pure bouquet of green apple, Bartlett pear, lemon zest, and white flowers, layered over subtle biscuit notes, wild herbs, and chalky limestone minerality. On the palate, it is bone-dry, vibrant, and surprisingly tactile, carried by an energetic, fine mousse and a mouthwatering spine of acidity that finishes crisp, clean, and remarkably saline.
