This is an incisive, pure-expression Blanc de Blancs from one of Champagne's leading natural wine pioneers: the Champagne Chavost "Blanc de Chardonnay" Brut Nature. Masterminded by cellar master Fabian Daviaux in the Côteaux Sud d'Épernay village of Chavot-Courcourt, Chavost has achieved international cult status for its uncompromising natural ethos—vinifying parcel-driven fruit with indigenous yeasts, zero added sulfites (sans soufre ajouté), no filtration, and zero dosage. Showcasing the striking tension and mineral backbone of Chardonnay grown on chalk and limestone slopes, the nose opens with a radiant, pristine bouquet of crisp green apples, lemon zest, white peach, and acacia blossoms, underpinned by crushed wet chalk, oyster shell minerality, and fine yeasty brioche nuances. On the palate, it is crystalline, bone-dry, and tactile, boasting an energetic, pinpoint mousse balanced by an electric, mouthwatering line of natural acidity that sails into an exceptionally clean, vibrant, and saline-driven finish.
