Masterminded by cellar master Fabian Daviaux in the Côteaux Sud d'Épernay village of Chavot-Courcourt, Chavost is globally renowned for its radical, low-intervention philosophy—championing spontaneous fermentation with native yeasts, zero added sulfites (sans soufre ajouté), no filtration, and zero dosage. Vinified exclusively from 100% Pinot Meunier, this cuvée celebrates the grape's unique generosity, expressive aromatics, and savory depth. The nose opens with an alluring bouquet of bruised red apples, wild strawberries, ripe Mirabelle plums, and lemon verbena, layered over warm brioche, wild honeycomb, and crushed chalk minerality. On the palate, it is vinous, textural, and bone-dry, featuring an energetic, fine mousse and a driving line of tension that balances Meunier’s natural roundness, carrying into a clean, mouthwatering, and savory finish.
