This is the rare, deeply intriguing Blanc de Noirs cuvée from one of Champagne’s most celebrated natural wine pioneers: the Champagne Chavost "Paradoxe" Brut Nature. Masterminded by cellar master Fabian Daviaux in the Côteaux Sud d'Épernay village of Chavot-Courcourt, Chavost is globally recognized for its uncompromising natural ethos—vinifying parcel-selected fruit exclusively with native yeasts, omitting all added sulfites (sans soufre ajouté), and bottling unfined, unfiltered, and with zero dosage. Named "Paradoxe" for its striking contrast of rich dark-grape depth and crystalline mineral tension, this Blanc de Noirs opens with an enticing, vinous bouquet of redcurrant, wild raspberry, bruised orchard apple, and blood orange peel, seamlessly layered with toasted brioche, honeycomb, and wet chalk. On the palate, it is full-flavored, tactile, and bone-dry, delivering an energetic, fine mousse framed by an incisive spine of natural acidity that sails into an expansive, savory, and distinctly saline finish.
